A cookbook is to be published tomorrow (Tuesday) aimed at giving a new lease of life to people with kidney disease, writes JOHN FALLON.

A Cork woman, who herself received a kidney transplant four years ago, has got some of Ireland’s top chefs to create recipes suitable for people living with kidney disease.

 

 

Valerie Twomey, is publishing ‘Truly Tasty’ in an effort to create a new range of recipes and also to promote organ donor awareness.

 She asked Ireland’s top chefs to create delicious recipes in conjunction with the Irish Nutrition & Dietetic Institute that would be suitable for adults living with kidney disease.

 

In addition, Cork journalist Brian Moore, who has been living with kidney disease for the past two years, interviewed the chefs who have come up with the recipes.

 

There are over 100 recipes in the book from 30 top chefs and Valerie Twomey says that there is a superb diversity in the recipes.

 

“There are tempting recipes such as melon and raspberries with cinnamon jelly and basil from Ross Lewis, chargrilled fillet of beef with ratatouille from Derry Clarke, tarragon plaice en papillote with julienne vegetables and chive mash from Clodagh McKenna and Pavlova with passion fruit and kiwi from Rachel Allen.

 

“We have had a great response,” said Valerie.

 

The cookbook is being supported by the The Irish Nutrition & Dietetic Institute(INDI) and Halóg Mellett, a renal dietitian, said it would be invaluable to people living with kidney disease.

 

“Good nutrition is vital for all of us to keep healthy and for someone with kidney disease the renal diet is a core factor in keeping well. Truly Tasty will allow people with kidney disease to plan that special meal with ease and confidence.”

 

The cookbook will be available from next week in shops and online from www.corkuniversitypress.com and all profits will go to the Irish Kidney Association.
